I hope you had a fabulous weekend!

On Halloween morning, my niece sent me a text with that Michael Jackson "Thriller" picture. I hope you've had a chance to see Michael's movie "This Is It" by now. Not surprisingly, it was the #1 movie of the weekend! Sucks for the scary movies that they weren't at the top of the box office for the Halloween weekend. Oh well. Here's how the weekend box office looked:
(1) "This Is It," $21.3 million (taking it's total U.S. gross since Wednesday to $32.5 million and to over $100 million worldwide!)
(2) "Paranormal Activity," $16.5 million
(3) "Law Abiding Citizen," $7.3 million
(4) "Couples Retreat," $6.1 million
(5) "Saw VI," $5.5 million
Go Yankees!!!

I snapped that picture just before the weekend of the Empire State Building lit in Yankees colors!


I also spotted that Yankees-themed carved pumpkin in the lobby of my apartment building. Let's keep it going Yankees!
The other day, I tried a recipe that my sister recommended. It's sort of a tostada. Here's how I prepared it in case you'd like to try it yourself...

I sauteed some peppers, onions & mushrooms in olive oil.

Then I added some fresh baby spinach.

Once the veggies were all sauteed..

I added some ground turkey meat that I seasoned with salt, pepper & chili powder. Once the turkey was completely browned...

I melted some butter in another pan.

Then I toasted four tortillas in the pan.

Then it was time to assemble the tostada. So I placed two of the toasted tortillas in a pyrex dish.

I spread the turkey & veggie mixture on the tortillas.



I used two types of cheese to layer on top of the turkey & veggie mixture...cheddar & parmesan.

After I placed the final two toasted tortillas on top of the meat & veggie mixture, I sprinkled a little more cheese on top and baked in the oven for about 15 or 20 minutes.

And that was the finished result! I thought the meal was a so-so success. I liked that I made the meal at home because I was able to control my ingredients by putting in lots of fresh veggies and fat free tortillas. Unfortunately, I think it was the fat free tortillas that made them a little rubbery instead of crispy after toasting. The veggie & ground turkey mixture was extremely yummy. I was a little heavy handed on the seasoning though. The mixture of salt, pepper & chili powder were perfect for this meal, but I could have used a lot less of it. The tostadas would have also been better with salsa. The concept of the meal is healthy & good, but the results could have been better. So when I went to the store today, I bought all of the ingredients again, plus some salsa. I'll tweak it a bit and hopefully the meal will be better the next time.
